The firmness of your selection goes a long way toward determining whether the taut stainless-steel filament passes easily through the cheese to render a succulent slab or whether you're caught mid-curd resembling the loser at Dueling Banjos, with a broken string and a sharp twang echoing in your ears. The folks at Norpro know this, too; they've included two replacement wires with this hardwood cheese slicer. The wire installs very easily and quickly into the clean lines of the coping-saw-like handle, but do yourself a favor: stick to unaged Cheddar and other semi-firm cocktail-party varieties.
